Eggroll in a Bowl or Eggroll Insides

Modified recipes from various sources and combined







In a large, deep skillet, brown/saute the following:

  • 1 lb or less ground meat (pork, beef, lamb, chicken, etc.)
After the meat has browned, add:

  • green onions, diced
  • celery, diced

While the meat is browning, in a small bowl combine the ingredients below
  • 5 cloves garlic, minced
  • 1 teaspoon ginger
  • 1/2 cup soy sauce replacement (coconut aminos or heavily salted water)

Once the meat is cooked, add dry coleslaw mix to skillet and stir well. Pour soy sauce mixture into the skillet and stir, continuing to cook over medium heat for about 5 minutes or until cabbage is wilted, but still a bit crunchy. Serve with sliced green onion.

NOTE:
Alternatively, you can pre-saute the cabbage and just combine it with the cooked meat when you get to that point; this can save a little bit of time if you are in a rush.

Herb Meatballs

These are so good!  You can also throw in a handful of raisins for a surprise flavor in them! Use them as an appetizer or over spaghetti squash with marinara sauce.


1 lb ground beef
1 lb ground pork
1/2 finely chopped onion
1/2 cup fresh basil, finely minced
1/2 cup fresh chopped parsley
4 eggs
1/2 cup almond meal
1 Tbsp dried oregano
4 cloves garlic minced
Sea salt and pepper to taste

350 oven.

Combine all ingredients into a bowl and mix well.

Make meatballs with a tablespoon measure and place them on a baking sheet or in a mini muffin tin and cook for about 25 minutes.

Crispy Bacon Chili

Modified from recipe on The Chew website


1 lb bacon (chopped)
2 lbs ground beef
2 garlic cloves (chopped)
2 teaspoons ground cumin
1 teaspoon chili powder
1 large red onion (diced)
1 jalapeno (diced; optional)
2 tsp dried oregano
56 ounces canned fire roasted tomatoes
Garnish
Scallions
Diced Red Onions
Hot Sauce

In a large dutch oven or heavy-bottom pot, cook the bacon over medium heat until crispy (about 5-7 minutes). Remove bacon and reserve for garnish.

With the bacon drippings in the pot, add the beef and season generously with salt and pepper. Cook, stirring occasionally, until dark brown and crispy (about 10 minutes). Push the meat to the side and toss in the onions, jalapeno, and garlic.

Sprinkle in the seasonings and stir to coat. Cook for 2 minutes until softened then stir into the meat. Pour in the fire roasted tomatoes and adjust seasoning to taste.

Bring to a boil then reduce to a simmer. Cook, uncovered, for 30 minutes or until mostly thickened.

Serve with your choice of garnish and reserved crispy bacon.

Beef & Butternut Stew - Crockpot

1 lb. beef cubes for stewing
1 butternut squash, diced
1 med onion, diced
3 cloves garlic, minced
4 carrots, diced
6 oz mushrooms, sliced
6 oz spinach, chopped
1 cup chicken stock
14 oz diced tomatoes
1 Tbsp chili powder
1 tsp paprika
1 tsp dried oregano

Quickly sear stew meat on medium-high heat in the skillet; transfer to crockpot.

Add all remaining ingredients except the spinach and mushrooms.

Stir and cook on low for 6 hours.

Add mushrooms 30 minutes before stew is done.  Add spinach just before serving.

Crockpot Beef Stroganoff

2 lbs. beef stew meat
2 tsp. salt
1/2 tsp. pepper
1 tsp. garlic powder
2 tsp. paprika
1 tsp. thyme
1 tsp. onion powder
8 oz. sliced mushrooms
1/2 onion, sliced
1/3 c. coconut cream (scooped from the top of a refrigerated can of coconut milk)
2 tsp. red wine vinegar

Amish One-Pan Ground Beef & Cabbage Skillet

This looks like a variation of our Serious Goodness Casserole -- but done on the stovetop!


1 lb grass-fed ground beef
1 onion, chopped
1/2 - 1 head cabbage, chopped
1 Tbsp Ghee
1 clove garlic, minced
14.5 oz can diced tomatoes
8 oz marinara sauce, tomato sauce, or salsa
salt and pepper, to taste


Heat your pan to medium and brown the beef.

Then add the onion; continue cooking until translucent. Drain extra fat if needed (or leave it and don't use the ghee).

Add garlic and continue cooking for 1 minute.

Add ghee, cabbage, tomatoes, marinara/tomato sauce/salsa, salt and pepper to the pan and stir to combine.

Cover and simmer about 20 - 30 minutes until the cabbage is soft.

Meatloaf Muffins

These were made using a square muffin tin pan that accommodates 12 muffins!

Number of Servings 12

2 lbs. ground turkey, beef, or your favorite ground poultry/meat
1 egg         
Low sugar marinara sauce or salsa
3 Tbsp Flaxseed meal
1 tsp Onion powder
1 tsp Garlic powder
Crushed garlic (optional)
½ tsp Sage
To taste Onion flakes or minced
Mushrooms
Squash or zucchini, cubed small
      
Combine all ingredients except the marinara sauce and mix well. Add enough marinara to make the mixture just a little on the “wet” side. With the mushrooms and squash, I ran both through about three pulses of my Ninja food processor before adding to the rest of the ingredients.

Place an even amount of the mixture into 12 muffin tins and bake at 350 for about 25-30 minutes. If you are going to freeze some of them, I'd bake for 25 minutes; then once they're defrosted and reheated, they will be the perfect texture and moisture level.

After removing from the oven, let it sit for 10-15 minutes before serving.


Meatza Pizza

1 lb ground beef, turkey, or chicken
Spices of your choice (salt, pepper, garlic, oregano, italian seasoning)
2 eggs
Pizza sauce
Veggies of your choice
Additional meats

Brown the ground beef in a skillet and let cool. When browning, add your choice of spices such as salt, pepper, garlic powder, oregano, italian seasoning, etc.  Once cooled, mix with the eggs.

Pack the mixture down tight into a casserole dish/pizza pan/ baking pan to about the thickness of a pizza crust. Then layer on top red sauce, veggies, addiitonal meats (if you want).

Bake in 350 degree oven until done.

Stuffed Peppers - Crockpot

4-5 bell peppers, seeded and halved
1 pound lean ground beef or ground turkey
1 Tbsp olive oil
Mushrooms (1-2 cups, chopped, or as much as you like)
1 onion, chopped
4 cloves of chopped garlic
1 can diced tomatoes
8 oz can tomato sauce (or more, if desired)
Salsa

Brown the turkey with the olive oil, onion and garlic. Add mushrooms and cook until they are soft. Add diced tomatoes and ½ cup of salsa. Heat through.

Coat slow cooker with cooking spray. Stuff peppers and place in cooker. Top with tomato sauce and more salsa. Cover and cook on low 6-8 hours, or until peppers reach the consistency you prefer.

This can also be baked in the oven: Bake at 350 for 50 minutes.

Notes:
Get creative with your vegetables when stuffing this! You can use carrots, or other variations.


Italian Spaghetti Squash Casserole

Spaghetti Squash
1 lb leanground beef, ground turkey, or ground chicken (or really, any ground meat or poultry will work well)
Marinara sauce
Italian Seasoning
Mushrooms

To make the spaghetti squash:
In the oven: Poke holes in the spaghetti squash and bake at 375 for 1 hour.
In the microwave: Cut spaghetti squash in half, put plastic wrap over the open side of the spaghetti squash and place, face-down, on a dinner plate that has about 1/4" of water in it, then microwave for about 10 minutes.

After cooking is done, remove the seeds and shred the spaghetti squash with a fork.

To make the casserole:
Cook turkey meat with your favorite spices.

Spray the bottom of baking pan then layer with spaghetti, meat, sauce, and 1 can of mushrooms. Bake at 350 for 30 minutes.

On Whole30, there is no way I'd consider this SWYPO, as it's not going to get you wanting sweet cupcakes! This is all good protein and sweet potato!

This could really be made with any sort of ground meat or chicken, so creativity is in your lap on that!

Bacon Beef Butternut Squash

Broccoli Beef



Chinese Food at home!

Serves 4

1 lb sirloin steak, sliced thin
1/2 cup low sodium chicken stock
2 Tbsp coconut oil (separated)
2 cups broccoli, cut into flowrets
2 cups carrots, thinly sliced
1 green onion, thinly sliced.
2 cloves garlic, minced
2 tsp freshly grated ginger
2 tsp black pepper
1/4 tsp sea salt
1/2 tsp red pepper flakes

Heat 1 Tbsp coconut oil and garlic in a large skillet over medium high heat. Add sirloin and sea salt and brown. Remove beef from pan to a separate dish; drain juice from the pan.

In a separate bowl mix lemon juice, ginger, black pepper, red pepper, and chicken stock.

Heat skillet again and add 1 Tbsp oil once the skillet is hot.

Add broccoli and carrots to pan. Once heated, pour broth mixture over and toss to coat. Simmer until broccoli is tender.

Return beef to pan and add green onions. Allow to simmer until beef has been re-warmed.
